Description
Savory plant-based sausage, cucumber, tomato, olives, and greens wrapped in soft flatbread with a creamy garlic-dill yogurt sauce. An easy wrap inspired by some of my favorite gyro flavors.

Prep Time: 20 minutes
Storage: Best eaten right away if made with my Air Fryer Flatbread, but can be kept for a few hours if not made with a psyllium-based flatbread/wrap.

In a small bowl, whisk together the yogurt, mayonnaise, garlic, and dill and set aside.

Make the flatbread and sausages. You may be able to cook the sausages in the air fryer alongside the flatbread. See your product packaging for options.

While these bake/cook, prepare your veggies and olives.If you don't like olives, feel free to omit them. You could instead use pickled jalapeño slices or capers if you'd like a replacement option. Both of these alternatives are very low in net carbs.

To construct the wrap, I like to put the veggies on the bottom - lettuce, then tomato, then cucumber. I halve my sausage(s) lengthwise and put these next. Then, I top this with my olives and the sauce. Sprinkle with additional salt, pepper, and spices if desired.

Enjoy soon after constructing.
This wrap is best eaten soon after construction because psyllium husk gets slimy when wet. If left to sit with wet fillings, you may not enjoy the texture of the bread once you get to eating it. If you have made this recipe with another type of flatbread or wrap, storing it for a few hours may not be an issue.

Notes
- The gluten-free, soy-free, and nut-free nature of this wrap will really depend on the flatbread (or wrap) and the sausages you use.
- I'm not a fan of most plant-based meats, but I really like the Beyond Breakfast Sausage Links. Unfortunately, my supermarket didn't have any on the day I made the wrap I've photographed and so what's in the photo is a Linda McCartney's sausage, which is a bit less keto-friendly (and less tasty in my opnion). If you prefer not to use plant-based meats, you could use some seasoned air-fried tofu.
