This easy air fryer keto flatbread combines almond and coconut flours with psyllium husk and protein powder for a flexible, protein-rich bread that’s suitable for filling and folding while fresh. It’s vegan and gluten-free, with simple options for making it soy-free or nut-free.

Don't have an air fryer? I haven't tried making this flatbread in a normal oven, but I suspect it would work. If you want to try it, I'd suggest baking it for about 15-18 minutes in a conventional oven (at the same temperature).
Think you'll make this flatbread often? Save yourself some time in the future by making little jars of the dry mixture to have on hand.

Whisk together the dry ingredients in a small mixing bowl.

Whisk together the milk, oil, and vinegar in small bowl or cup.

Add the wet mixture to the dry mixture and mix to form a dough. I use a small silicone spatula for this.

Let the dough rest for a couple of minutes while you get an 8-inch (20cm) square piece of parchment paper.

With well-oiled hands, press the dough out on the parchment paper to a disc a little under ¼ inch (about 5mm) thick.

Preheat the air fryer or oven to 350°F (175°C). Bake the flatbread for 10 minutes. No need to flip.

Remove from the air fryer and allow to cool for 2-3 minutes. Then, carefully peel off the bottom layer of parchment.

Enjoy warm with toppings/fillings of choice.

Notes
- Psyllium husk can be a bit gritty and so you might notice a bit of grit in your flatbread. This is normal. If you don't have whole husks, you can use 1 tablespoon (10g) of powder.
- Wraps, sandwiches, etc. made with this flatbread are best eaten soon after construction because psyllium husk gets slimy when wet. If left to sit with wet fillings, you may not enjoy the texture of the bread once you get to eating it.
