Corn & Beans Two Ways
A colorful mix of corn, soybeans, peppers, and toasted pumpkin seeds that can be served as a fresh salad or a warm, buttery dish.

This corn and bean recipe combines sweet corn, protein-rich soybeans, peppers, toasted pumpkin seeds, lime, and warm chili-cumin seasoning, with two ways to prepare it depending on what you’re in the mood for. Corn is a bit of a keto no-no, but I’ve always thought there’s room to be strategic about ingredients rather than automatically ruling them out. Used in a controlled amount and combined with very low-carb ingredients, corn can still fit into some keto diets. I’ve deliberately made it a prominent part of this dish, though, so the net carbs are a little higher than in many of my recipes. Those with a higher carb limit can enjoy it as a meal, or you can divide it into five smaller servings and serve it as a side dish. I’ve included the calories and macros for both meal and side serving sizes in the nutrition section below the recipe.

The two versions use essentially the same ingredients but suit very different moods. When I want something chilled and refreshing, I make the salad with olive oil, plenty of lime juice, cilantro, and nutritional yeast. When the weather calls for something warmer, the heated version swaps the oil for vegan butter, reduces the lime, and increases the nutritional yeast for a richer, more savory result. I particularly like toasted pumpkin seeds here because they add crunch and a deeper flavor, although toasting them is optional. Chili powder and cumin provide the main seasoning, and if you don’t have a North American-style chili powder blend, you can use taco or fajita seasoning instead. Check your labels for added starches. I use soybeans made from my Soft Instant Pot Soybeans recipe to keep the carbs lower while adding protein, but there’s a higher-carb soy-free variation using black beans if that works better for you. You can find more ideas for using beans in my Bean Recipes. Whichever version you choose, make sure to check the label on your canned or frozen corn since added sugar is surprisingly common. Salad for hot weather or a warm bowl for chilly days, you can take your pick!

Prep Time: 20 minutes for salad and 30 minutes for heated dish

Storage: undressed salad, salad dressing, and heated dish can be stored refrigerated for up to 3 days. Dressed salad can be stored for up to 24 hours.

 

Soy-Free Version (Higher-Carb): replace the soybeans with 1½ cups (258g) black beans (equal to a 15oz [425g] can, drained and rinsed).

Instructions

For the Salad:

  1. Combine the beans, vegetables/herbs, and pumpkin seeds in a medium-sized mixing bowl

  2. Whisk the remaining ingredients together in a small bowl to make the dressing.

  3. Pour the dressing over the bean/veggie mixture and mix to distribute the dressing thoroughly.

  4. Divide into desired number of servings — e.g. 5 x 130g (~ ¾ cup) or 3 x 215g (~1⅓ cups) — and Enjoy cold.

For the Heated Dish:

  1. Put the beans, corn, red pepper, jalapeño, chili powder, and cumin in a small saucepan. Add a splash of water or liquid from the can of corn. Cover with a well-fitted lid and heat on medium-low for 7 to 10 minutes, or until peppers are desired tenderness. Stir occasionally and adjust the heat as necessary.​

  2. Add the oil or butter, nutritional yeast, lime juice, and pumpkin seeds to the pan. Cook for an additional 1 to 3 minutes, or until no water remains. Stir often.

  3. Salt to taste and then divide into desired number of servings — e.g. 5 x 130g (~ ¾ cup) or 3 x 215g (~1⅓ cups) — and top with the green onion and cilantro. Enjoy warm.

Notes

  • Toasting pumpkin seeds is not required, but it adds crunch and depth of flavor to the recipe.
  • Chili powder is a common North American spice blend. It's not just powdered chilis. Recipes for this blend can be found online or in my first book, Keto for Vegans: Book 1. It can also be replaced with a taco or fajita seasoning blend. Beware of blends with a high starch content.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. For a few ingredients, however, I use label or custom data instead, even when NCCDB data is available. This is usually because I’ve found the label data to differ substantially and consistently for those foods.

In this recipe, I used label or custom data for the pumpkin seeds (Bob's Red Mill) and nutritional yeast flakes (blend of Bob's Red Mill and Foods Alive unfortified).

Note that both NCCDB and label data can change over time, so the values shown here may differ from current data.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively impact mental health, so most numbers are rounded. Calories are rounded to the nearest multiple of 5, and macros are rounded to the nearest 0.5 g or whole number, depending on their value and use. For simplicity, naturally occurring sugar alcohols are counted as fiber unless the recipe includes added sugar alcohols.
