Jalapeno & Corn Chowder
A spicy, creamy-style corn chowder packed with jalapeños and warm savory seasonings.

This jalapeño corn chowder is spicy, savory, and full of one of my favorite flavor combinations: jalapeños and corn. Corn may not be the first ingredient that comes to mind for a keto recipe, but using a relatively small amount alongside plenty of jalapeños lets its sweet flavor come through without making it the bulk of the soup. And this soup certainly lived up to my expectations. It has a substantial kick, so if your spice tolerance isn’t particularly high, you can replace some of the jalapeños with green bell pepper without significantly changing the macros. If you’re like me and actively seek out some heat, you can find more ideas among my spicy recipes.

The chowder starts with onion, garlic, and jalapeños cooked in a little oil before the broth, corn, nutritional yeast, oregano, and cumin are added. Part of the soup is blended to give the broth more body while still leaving plenty of pieces of corn and jalapeño intact. A little lime juice at the end is optional, but adds some acidity to balance the sweetness of the corn and the heat of the peppers. I’ve also included a milder, thicker variation that uses more corn. It’s higher in net carbs, but may suit those with a higher carb limit or who follow a more generally low-carb rather than strict keto approach.

Even the original version is more low-carb than strictly keto, and it’s relatively low in protein and calories, so I think of this chowder more as a side dish than a complete meal. I like to pair it with something very low in carbs and higher in protein to balance things out. My Oaty Drop Biscuits work particularly well alongside it and turn a bowl of spicy chowder into a more substantial meal.

Spicy jalapeño and corn chowder seasoned with garlic, cumin, oregano, nutritional yeast, and optional lime. Partially blended for a thicker broth while leaving plenty of corn and jalapeño pieces for texture.


Yield: 3 servings of about 1¼ cups (300g) each, totaling roughly 3¾ cups (900g) ​✎

Milder, Higher-Carb Chowder (More Corn): if you have a high carb limit or lean more towards a low-carb than keto eating style, this chowder can be made with more corn. This variation is also milder and thicker. Reduce the jalapeño to 1 cup (120g [about 6-7 peppers]), increase the corn to 2 cups (328g [about a 15.25-ounce [432g] can]), and reduce the water to ¼ cup (60ml).

Instructions

  1. In a medium-sized saucepan, heat the oil on medium-low heat. When hot, add the onion and garlic and sauté for 2 to 3 minutes or until onions are soft but not brown. Stir often and adjust heat as necessary. If using a fat-based bouillon cube, you can add it now to melt it.
  2. Add the jalapeño and sauté for an additional 3 to 4 minutes.
  3. Add all remaining ingredients, apart from the lime juice, to the pan. Bring to a simmer, reduce to low heat, cover with a well-fitted lid, and cook for 15 minutes.
  4. Transfer the soup to a heat-safe blender, add the lime juice, and pulse until a semi-blended consistency, or consistency of preference.
  5. Divide into desired number of servings — e.g. 4 x 240g (1 cup) or 3 x 320g (~1⅓ cups) — and enjoy hot. Optionally, top with additional dried oregano, cumin seeds, and/or low-carb vegan sour cream or cheese. It could also be served with lime wedges.
    Soup yield can vary quite a bit depending on lid fit and subsequent water loss while cooking. If you want to be sure of your serving sizes, I suggest weighing or measuring the final product and dividing the amount into your desired servings. Note that blended soups often reduce in size once stored, so weight is a better metric than milliliters.

I decided the best course of action was to transfer the domain name (www.keto4vegans.com) to my new unfinished site rather than have you encounter an error page and not have access to any of my content. 

Most of the content from my original site is already available here, and I’m working hard to redirect links, revise formatting, and add all the data needed for the new site’s fancy features to function at their full capacity.
