Quick tortilla toaster tarts with peanut butter and your choice of fruity or chocolate filling

These peanut butter toaster tarts turn a low-carb tortilla into a quick, crisp-edged breakfast or sweet snack with either a PB & J or peanut butter and chocolate filling. The idea came from a tortilla toaster hack that popped up in one of my social media feeds. The version I saw was savory, but my mind immediately went to peanut butter and “jam” and peanut butter and chocolate chips. I have savory ideas too, but they require a bit more preparation, while these are meant to be an easy take on a toaster pastry or Pop-Tart.

I don’t buy many packaged keto foods, but low-carb tortillas and wraps are one exception I use fairly regularly. Here, a flexible tortilla is filled with peanut butter and hemp hearts, then paired with raspberries, strawberries, low-carb jam, or dark chocolate chips. I’ve calculated the nutrition using Mission Protein tortillas, but the macros can vary considerably depending on the wrap and fillings you choose. If you’re making the PB & J version, you can use fresh berries or a low-carb jam, such as the one in my second book.

The peanut butter makes these a little higher in net carbs than some of my recipes, but sunflower seed butter can bring the carbs down slightly while also providing a peanut-free option. Almond butter works too, and you can increase the hemp hearts if you’d like a little more protein. Quick toaster tarts made with a low-carb tortilla, peanut butter, and hemp hearts. Fill them with berries or low-carb jam for a PB & J version, or add dark chocolate chips for a chocolate variation.

Instructions

  1. Lay your tortilla out on the clean countertop.
    Make sure to use a tortilla/wrap that folds without breaking, otherwise, you will end up with the filling leaking into your toaster. If your tortilla is a bit stiff, but bendy when warm, you could microwave it for a few second before filling it. Also, be careful with, or avoid using, overly floppy tortillas as these will more easily fall through the toaster "cage" and touch the heating elements and burn. They are also harder to remove from the toaster.
  2. Spread your peanut butter in the middle third of the tortilla, leaving a small area empty in the center.

  3. Top the peanut butter with the remaining ingredients, in the order given in the ingredient list. If using raspberries, break them into halves or pieces to lay flat.
  4. Fold the sides of the tortilla over the filled middle portion, with the sides overlapping. Then, fold this in half at the center.

  5. Place in the toaster with the open end facing up. 

  6. Toast for as long as able in order to fully heat through. How long you can toast without burning will depend on your tortillas. Monitor carefully and watch out for tortilla edges bending through the "cage" and towards the heating elements where they will burn. Rearrange with a heat-safe plastic utensil if necessary.

  7. Remove from the toaster. Because of bending, you may need the help of a heat-safe non-metal utensil for this.

  8. Enjoy soon after toasting.​

  • I'm calculating the macros with Mission Protein tortillas/wraps, which have 7g protein and 2g net carbs. Make sure to use a tortilla/wrap that folds without breaking; otherwise, you will end up with the filling leaking into your toaster.   • The macros are calculated with 30g of raspberries, which contain about 2g net carbs. If using a store-bought low-carb jam, look for one with 1g net carbs per tablespoon. The jam in my second book has 1g net carbs per tablespoon.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. There are a few items that I choose to use label or custom data for instead, despite the availability of NCCDB data. This is usually because I've found that the label data differs substantially and consistently for these foods. In this recipe, I have used label/custom data for the tortilla (Mission, Protein), hemp hearts (Manitoba Harvest), and chocolate chips (ChocZero dark). Be aware that both NCCDB and label data change over time and so what I've given here may have changed since the recipe was first published.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively affect mental health by being time-consuming and by creating an obsession with inconsequential levels of detail. In an effort to mitigate this, numbers are rounded. In most cases, numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g). Any numbers below 0.5g are given as is (e.g. 0.1g, 0.2g, etc.). Calories are rounded to the nearest multiple of 5.
