Subak Hwachae (Korean Watermelon Punch)
A light, sparkling Korean-inspired fruit punch with watermelon, strawberries, and lemon-lime soda on ice

This keto subak hwachae is my lighter, less-sweet take on Korean watermelon punch, made with fresh watermelon, strawberries, and a cold, sparkling base. You can use zero-sugar lemon-lime soda, or my preference, soda water with a little lemon or lime juice and sweetener to taste. It’s fruity, fizzy, and especially refreshing served over plenty of ice on a hot summer day.

My introduction to watermelon punch actually came long before I knew what it was. When I was a university student working a summer job as a hotel front desk clerk, my Korean boss would sometimes bring me a bowl of chopped watermelon in lemon-lime soda. I enjoyed it, although I also thought it was quite odd. Years later, when I lived in Korea, I discovered that this kind of fruit punch was a common summer treat. My version isn’t intended to be traditional, particularly since I prefer soda water to lemon-lime soda. I find the less-sweet base lets the fresh fruit flavor come through rather than being overwhelmed by the soda. Strawberries are also not a traditional component, but they are a lower-carb fruit than watermelon, so using them brings the net carbs down a little.

Watermelon and strawberries are my standard combination, but I’ve included several other fruit pairings with roughly similar net carbs, including raspberries with cantaloupe, blackberries with honeydew, and strawberries with Asian pear. Because this is a fruit-based recipe, it is higher in net carbs than many of my recipes, but it can still fit some keto and low-carb diets depending on your individual carb limit. You can also add plant-based milk if you prefer a creamier punch, although I ultimately decided that the milk-free version was more refreshing. Notes

  • Traditionally, this punch is made with lemon-lime soda. However, I find it much too sweet for my taste and that the lemon-lime soda and syrupy sweetness overpowers the fresh fruit flavor. Personally, I prefer to make it with the soda water option I've given (which is not in the least bit traditional as far as I'm aware).
  • Traditionally, this punch may also include fruit juice and milk (usually condensed). I have tried making this recipe with canned full-fat coconut milk and with a low-fat plant-based milk. I didn't like either as much as I like it without, but feel free to experiment. Adding fruit juice would increase the net carbs quite a bit.
  • Watermelon seeds are edible and nutritious. Feel free to include them in the punch.

Frequently Asked Questions

Expand All:

Can I use different kinds of fruit?

What data is used to calculate the calories and macros?

When available, have used NCCDB data in Cronometer to calculate calories and macros. Be aware that NCCDB data changes over time and so what I've given here may have changed since the recipe was first published.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively affect mental health by being time-consuming and by creating an obsession with inconsequential levels of detail. In an effort to mitigate this, numbers are rounded. In most cases, numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g). Any numbers below 0.5g are given as is (e.g. 0.1g, 0.2g, etc.). Calories are rounded to the nearest multiple of 5.

What happened?

On July 4th, Weebly (my hosting platform) informed me that it was removing its services in my region and that my website would be unpublished as of September 27th. Fortunately, I had already been working on this new site and could have it finished by then. However, on July 15th, Weebly cancelled my subscription and notified me that my website would be unpublished imminently. I decided the best course of action was to transfer the domain name (www.keto4vegans.com) to my new unfinished site rather than have you encounter an error page and not have access to any of my content.

Most of the content from my original site is already available here, and I’m working hard to redirect links, revise formatting, and add all the data needed for the new site’s fancy features to function at their full capacity.

Thank you for your patience while I revise content and work through the kinks.
