This salad focuses on using a selection of very low-carb vegetables to get a large portion of salad with a minimal amount of net carbs. Made with the Marinated Mushrooms, a single serving of this salad contains only 4.5g net carbs, nearly 6 grams of fiber, and is a good source of iron, potassium, folate, and vitamins B2, B5, E, and K. Made with the vinaigrette, the salad has only 4g net carbs.

When I first conceived of this salad, I was a bit concerned that the high content of celery would overpower the dish. However, the mustard and thyme vinaigrette that marinates the mushrooms pairs perfectly with the celery; the marinated mushrooms add morsels of salty acidity, and the creamy avocado balances out the kick of the mushrooms. All in all, this turned out to be a very tasty and wonderfully nutritious salad.

A very low-carb salad dressed with either mushrooms and accompanying marinade, or a vinaigrette. The Marinated Mushrooms or Mustard & Thyme Vinaigrette can be made on their own as stand-alone recipes.


Yeild:

Salads — 4

Mushrooms — 1⅓ cups (280g) | 4 servings of ⅓ cup (70g)

Vinaigrette — 14 Tbsp (210ml) | 1 Tbsp (15ml) per serving


Storage: 

Salad — store marinated mushrooms or vinaigrette, unchopped avocado, and remaining salad ingredients (chopped and combined) separately, refrigerated, for up to 3 days. Add avocado and mushrooms or vinaigrette to the salad when ready to eat. Fully prepared salad can be stored for a few hours.

Mushrooms — refrigerated for up to 10 days.

Vinaigrette — refrigerated for up to 2 weeks.

Instructions

The Mushrooms:

  1. Put the mushrooms in a container or jar that holds about 1½ cups (360ml).

  2. Add the remaining mushroom marinade ingredients to the jar/container, seal with a well-fitted lid, and shake to combine.
  3. Refrigerate for about 8 hours or overnight. Shake a couple of times throughout this time period if possible.

The Vinaigrette:

  1. Put all ingredients in a small bowl or leakproof jar and whisk or shake to combine.

    You'll need a jar that will hold at least 7.1 ounces (210ml).
  2. If time allows, refrigerate the vinaigrette for about an hour before using to allow flavors to meld.

The Salad:

  1. Put the salad ingredients in a large salad bowl or medium-sized mixing bowl.

  2. If using the Marinated Mushrooms, add the mushrooms and marinade to the bowl and mix thoroughly to coat all ingredients.

    If using the Mustard & Thyme Vinaigrette, add 10 Tbsp (150ml) of vinaigrette to the bowl and mix thoroughly to coat all ingredients.

    You will have 4 Tbsp (60ml) vinaigrette left over to use elsewhere.
  3. Divide the salad equally between 4 dinner bowls.
  4. Enjoy soon after preparing.

Notes

  • Toasting pumpkin seeds adds great crunch and depth of flavor. If you're not a big pumpkin seed fan and haven't tried them toasted, you might be surprised by the difference. Depending on your location, toasted pumpkin seeds can often be bought already toasted in many large supermarkets or online.

What do you mean by "equivalent in sweetener of choice"?

In this recipe, you can use any of the keto-friendly sweeteners that exist, whether they are a bulky granulated one (e.g. erthritol), or a pure one (e.g. monk fruit or stevia) where only very small qualtities are needed. If using a granulated sweetener, you can just match the amount 1 for 1. However, if using a concentrated low-bulk sweetener, you may have to do some math. Liquid stevia or monk fruit usually claim a certain number of drops equal a teaspoon. There are 3 teaspoons in a tablespoon and 12 teaspoons in a quarter cup. Powdered pure monk fruits can vary quite a bit in concentration. I use Julian Bakery pure monk and find that their little scoop is equivalent to about ⅓ cup sugar in sweetness.

What do you mean by "carb-free vinegar of choice"?

Many vinegars are carb-free or extremely low in net carbs. However, some vinegars, such as balsamic or pomegranate can actually be quite high in net carbs or can contain sugars. For some people following a ketogenic or low-carbohyrate diet, these vinegars may be able to fit in their macros, and if that's the case, then or course, use whichever vinegar you like best and meets your personal needs.

What data is used to calculate nutritional data for this recipe?

When available, I usually use NCCDB data in Cronometer to calculate calories and macros. Occasionally, I use USDA data. For a few ingredients, however, I use label or custom data instead, even when NCCDB or USDA data is available. Typically, this is because I’ve found the product label data to differ substantially and consistently for those foods. Please note that NCCDB, USDA, and label data can change over time, so the nutritional calculations for the recipe, make at the time of writing, may differ from calculations made with current data.

Counting calories and macros can negatively impact mental health, so most numbers are rounded. Calories are rounded to the nearest multiple of 5, and macros are rounded to the nearest 0.5 g or whole number, depending on their value and use. For simplicity, naturally occurring sugar alcohols are counted as fiber unless the recipe includes added sugar alcohols.
