Air Fryer Flatbread
A flexible, protein-rich keto flatbread that bakes quickly in the air fryer and works well for wraps, dips, and alongside other meals.

I made this flatbread recipe a while back but hadn’t taken the time to write it up properly for sharing. Then one afternoon, I was craving something gyro-like and decided to use it to make myself a tasty Gyro-Inspired Flatbread Wrap. It seemed like the perfect excuse to photograph both and finally add the recipes to the site. The flatbread is easy to prepare, bakes quickly in the air fryer while you get the rest of your meal ready, and contains a good bit of protein thanks to the protein powder and nutritional yeast.

The combination of almond flour, coconut flour, and psyllium husk makes a flatbread that’s bendy enough for filling and folding while it’s fresh. It does become more fragile once cooled, though, so take a little care if you’re eating it as a wrap. Psyllium husk can also be slightly gritty, so you may notice a bit of texture in the finished flatbread; this is normal. If you find yourself making these regularly, you can save some time by measuring several batches of the dry mixture into little jars to keep on hand.

I developed this recipe for the air fryer and haven’t tested it in a conventional oven. I suspect it would work, and if you want to experiment, I’d start with about 15–18 minutes at the same temperature and keep an eye on it as it bakes. The recipe is vegan, keto, and gluten-free; use pea protein and pea milk for a soy-free version, or sunflower seed flour in place of the almond flour for a nut-free option.

Please note that vegan keto baking can be particularly finicky, and small differences in ingredient quantities can make a surprisingly big difference to the finished texture. For the most consistent results, I recommend weighing your ingredients using the gram measurements provided rather than relying on volume measurements.

Storage: best fresh, but can be stored for up to 2 days at room temperature or 5 days refrigerated.

Don't have an air fryer? I haven't tried making this flatbread in a normal oven, but I suspect it would work. If you want to try it, I'd suggest baking it for about 15-18 minutes in a conventional oven (at the same temperature).

Instructions

  1. Whisk together the dry ingredients in a small mixing bowl.
  2. Whisk together the milk, oil, and vinegar in small bowl or cup.
  3. Add the wet mixture to the dry mixture and mix to form a dough. I use a small silicone spatula for this.
  4. Let the dough rest for a couple of minutes while you get an 8-inch (20cm) square piece of parchment paper.
  5. With well-oiled hands, press the dough out on the parchment paper to a disc a little under ¼ inch (about 5mm) thick.
  6. ​Preheat the air fryer or oven to 350°F (175°C). Bake the flatbread for 10 minutes. No need to flip.
  7. Remove from the air fryer and allow to cool for 2-3 minutes. Then, carefully peel off the bottom layer of parchment.
  8. Enjoy warm with toppings/fillings of choice.

Notes

  • Psyllium husk can be a bit gritty and so you might notice a bit of grit in your flatbread. This is normal. If you don't have whole husks, you can use 1 tablespoon (10g) of powder.
  • Wraps, sandwiches, etc. made with this flatbread are best eaten soon after construction because psyllium husk gets slimy when wet. If left to sit with wet fillings, you may not enjoy the texture of the bread once you get to eating it.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. There are a few items that I choose to use label or custom data for instead, despite the availability of NCCDB data. This is usually because I've found that the label data differs substantially and consistently for these foods. In this recipe, I have used label/custom data for the protein powder (pea, Now Foods) and the nutritional yeast flakes (blend of Bob's Red Mill and Foods Alive unfortified). Be aware that both NCCDB and label data change over time and so what I've given here may have changed since the recipe was first published.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively affect mental health by being time-consuming and by creating an obsession with inconsequential levels of detail. In an effort to mitigate this, numbers are rounded. In most cases, numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g). Any numbers below 0.5g are given as is (e.g. 0.1g, 0.2g, etc.). Calories are rounded to the nearest multiple of 5.
