Carrot cake-inspired energy balls with warm cinnamon, walnuts, hemp hearts, and a boost of plant-based protein.

These carrot cake energy balls combine fresh carrot, almond butter, walnuts, cinnamon, and hemp hearts with protein powder for a sweet, warmly spiced snack with plenty of carrot cake character. The idea had been sitting in the back of my mind for a while after a post about carrot cake energy balls popped up in my feed. I was just waiting until I had both the free time and space in my tummy to come up with a vegan keto version to share. Now that my second book is finally edited and approved for release, I have a little more room in my life to make whatever happens to tickle my fancy, and these pretty little energy balls were one of the first things on my list.

The combination of almond flour and almond butter forms the base, while walnuts and hemp hearts add texture and protein powder boosts the protein without requiring substantially more nuts. Carrot provides the familiar flavor and a little natural sweetness, and cinnamon brings in the warm spice I associate with carrot cake. If you’d like a stronger carrot presence, you can double the amount for about 2.5g net carbs per ball, with minimal change to the other macros. For a nut-free version, replace the almond butter and almond flour with sunflower seed butter and sunflower seed flour, and swap the walnuts for toasted sunflower or pumpkin seeds.

These fit nicely in rotation with some of my other Energy Balls when I want a small sweet snack, and the carrot, walnuts, and cinnamon also make them a natural addition to my Fall Spice Treats. You can experiment with flavored protein powder, although I find it can make the balls overly sweet, so a mixture of plain and flavored powder may work better. If you prefer not to use protein powder at all, you can replace it with additional almond flour, but this will increase the calories, fat, and net carbs while reducing the protein. However you adapt them to suit your needs, I’m glad I finally found the time to turn that recipe idea sitting in my feed into a vegan keto treat I could share with you all.

Yield: 10 servings of 1 ball (32g) each, totaling 10 balls (315g)

Nut-Free Option: replace the almond butter and almond flour with sunflower seed butter and sunflower seed flour. Replace the walnuts with toasted sunflower seeds or pumpkin seeds.

Instructions

  1. Put the almond butter, maple syrup, and vanilla in a medium-sized mixing bowl and mix to smooth.
  2. Add all remaining ingredients and mix to form a thick dough.
  3. Divide into 10 pieces of about 32g (or 2 tablespoons) each.
  4. Roll the pieces into balls and place them on a tray/plate or in a storage container. Optionally, balls could be rolled in shredded coconut, chopped nuts, and/or cinnamon to decorate.
  5. Put the balls in the refrigerator to chill for about an hour to firm up.
  6. Enjoy chilled or at room temperature.

Notes

  • Double the carrot for 2.5g net carbs per ball (minimal change to other macros).
  • You could use a flavored protein powder, or a mixture of plain and flavored, but you might find the result overly sweet. If you prefer not to use protein powder, you could increase the almond flour. However, doing this will increase the calories, fat, and net carbs, and reduce the protein.

If I make this nut-free, are the macros the same?

Yes. For this recipe, the macros for the original version and the nut-free version are nearly identical.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. There are a few items that I choose to use label data for instead, despite the availability of NCCDB data. This is because I've found that the label data differs substantially and consistently for these foods. In this recipe, I have used label data for "maple syrup" (ChocZero), hemp hearts (Manitoba Harvest), and protein powder (pea, Now Foods). Be aware that both NCCDB and label data change over time and so what I've given here may have changed since the recipe was first published.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively affect mental health by being time-consuming and by creating an obsession with inconsequential levels of detail. In an effort to mitigate this, numbers are rounded. In most cases, numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g).
