Cheesy Broccoli Blender Soup
A creamy, cheesy broccoli soup made from frozen broccoli, yogurt and pantry staples, with no chopping or stovetop cooking required.

This cheesy broccoli blender soup turns frozen broccoli, coconut milk, nutritional yeast, yogurt, and pantry seasonings into a creamy soup without chopping vegetables or cooking on the stovetop. My approach to Blender Soups has three key requirements: little to no fresh produce, virtually no ingredient prep, and quick and easy cleanup. I figure if I’m going to shop for fresh ingredients, chop everything, cook it, and wash multiple dishes afterward, I may as well make soup the traditional way. These recipes are for the days when I want something warm and vegetable-packed without all of that.

That approach does impose one limitation: I’m largely working with canned and frozen produce. My previous blender soups have used canned ingredients that are already cooked, but this time I wanted to see what I could do with frozen broccoli. The trick is to run the blender’s soup cycle multiple times so the broccoli has enough time to cook and soften. The frozen broccoli and coconut milk go into the blender from the start, with the repeated soup cycles gradually cooking the broccoli as everything blends together. Stop too soon and you’re back in hot vegetable smoothie territory, which is not what we’re aiming for! Yogurt, nutritional yeast, and lemon or lime juice work together to give the finished soup its creamy, cheesy flavor, while onion, garlic, herbs, and a little tamari or aminos add savory depth. Optional red pepper flakes provide a bit of heat. Speaking of heat, the blender contents become progressively hotter with each cycle, so be careful when removing the lid, particularly after the second and third cycles, when quite a bit of steam will have built up inside.

I’ll freely admit that my quick blender soups aren’t trying to compete with a pot of soup made slowly on the stovetop with fresh ingredients. They’re about convenience, and I find them a low-stress way to get more vegetables into a busy day with very little cleanup afterward. If you’d like to try this one with fresh broccoli, I’ve included some suggestions in the notes. One thing you may wish to keep in mind is that the nutrition has been calculated using broccoli cooked from frozen, which, for reasons I cannot fathom, has about half as many net carbs in the nutritional data as raw broccoli or broccoli cooked from fresh. Do with that information what you wish!

Description

A creamy broccoli soup with cheesy flavor from nutritional yeast, yogurt, and lemon juice, with coconut milk for richness. Frozen broccoli and pantry staples keep prep to a minimum, with the blender doing the cooking as well as the blending.

Yield: 6 servings of about 1 cup (230g) each or 4 servings of about 1½ cups (345g) each, totaling about 6 cups (1,380g) ✎

Prep Time: 10 minutes | Cook Time: 15 minutes

Equipment required: a blender with a soup function

Storage: refrigerated for up to 5 days. Reheat on low to prevent separation.

Cooking Mode Disabled

Instructions

  1. Put the broccoli, broth, and coconut milk in your blender.
  2. Select the soup function on your blender and start. When it's completed the cycle, run it a second time. After this second time, when tasted, it should no longer have a distinct raw vegetable flavor to it. Be careful of steam when removing the lid.
  3. Add the nutritional yeast, spices/herbs, and tamari.
  4. Run the soup cycle again.
  5. Add the lemon/lime juice and yogurt to the blender. Blend briefly to incorporate.
  6. Divide into desired number of servings — e.g. 6 x 230g (1 cup) or 4 x 345g (1½ cups) — and enjoy hot.
Soup yield can vary depending on lid fit and steam evaporation during cooking and cooling. If accurate serving sizes are important to you, weigh the finished soup and divide it into your desired portions. Blended soups are often well-aerated after blending and settle during storage, so weight is more reliable than volume.

Optional toppings: black pepper, fresh or dried herbs, dehydrated onion flakes, a small amount of vegan cheese, and/or a thinly sliced Brazil nuts (for selenium and the appearance of cheese).

Notes

  • I have not tried making this recipe with fresh or steamed/boiled broccoli. Frozen broccoli is often quickly blanched before freezing, and so may be closer to cooked than raw fresh broccoli. If you want to try it with fresh broccoli, you may need to run the soup function an additional time. I assume making this soup with cooked fresh broccoli would be perfectly fine. If doing so, I would steam/boil the broccoli until tender, put all ingredients apart from the lemon juice and yogurt in the blender, and run the soup cycle just once.
  • Vegetable broths and bouillon cubes can be quite high in carbs if sugars or starches have been added. Check your labels. I usually use Edward & Sons bouillon cubes.
  • I'm using an unsweetened soy yogurt (Alpro) that has no net carbs and 4g protein per 100g. It is also very low in fat and calories. Macros on yogurt can vary a great deal, so if you're watching your macro intake carefully, you may wish to recalculate the macros for this recipe with your own product.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. For a few ingredients, however, I use label or custom data instead, even when NCCDB data is available. This is usually because I’ve found the label data to differ substantially and consistently for those foods.

In this recipe, I used label or custom data for the bouillon cubes (Edward & Sons Vegetable), coconut milk (Aroy-D), nutritional yeast flakes (a blend of Bob’s Red Mill and Foods Alive unfortified), and yogurt (Alpro Soy No Sugar).

Note that both NCCDB and label data can change over time, so the values shown here may differ from current data.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively impact mental health, so most numbers are rounded. Calories are rounded to the nearest multiple of 5, and macros are rounded to the nearest 0.5 g or whole number, depending on their value and use. For simplicity, naturally occurring sugar alcohols are counted as fiber unless the recipe includes added sugar alcohols.

What happened?

On July 4th, Weebly (my hosting platform) informed me that it was removing its services in my region and that my website would be unpublished as of September 27th. Fortunately, I had already been working on this new site and could have it finished by then. However, on July 15th, Weebly cancelled my subscription and notified me that my website would be unpublished imminently. I decided the best course of action was to transfer the domain name (www.keto4vegans.com) to my new unfinished site rather than have you encounter an error page and not have access to any of my content.

Most of the content from my original site is already available here, and I’m working hard to redirect links, revise formatting, and add all the data needed for the new site’s fancy features to function at their full capacity.

Thank you for your patience while I revise content and work through the kinks.
