Double Chocolate Protein Pudding
An intensely chocolatey, creamy pudding with silken tofu, avocado, and dark chocolate that doubles as a frozen fudge pop.

This double chocolate protein pudding is thick, creamy, and intensely chocolatey, combining melted baking chocolate with cocoa powder for plenty of rich chocolate flavor. Silken tofu, avocado, and coconut milk create the creamy dairy-free base, while optional protein powder adds extra protein without being essential to the texture. It’s also particularly rich in nutrients including iron, magnesium, potassium, and zinc. I would usually consider something this chocolatey dessert, but it’s substantial enough for a midday snack or even breakfast, if that’s how you roll!

The avocado helps give the pudding its rich, thick texture, but the cocoa flavor is intentionally quite intense to cover up its slightly “green” flavor. If you prefer something milder, I’ve also included an avocado-free version. That variation uses less baking chocolate, cocoa powder, sweetener, and protein powder while keeping the macros fairly similar. Whichever version you make, be sure to bring the tofu, avocado, and milks to room temperature before blending. Otherwise, the melted chocolate can solidify when it hits the cold ingredients rather than blending smoothly into the pudding. Top it with berries, cacao nibs, nuts or seeds, chocolate chips, nut or seed butter, or whipped plant-based cream. And when the weather calls for something frozen, the exact same mixture can become fudgesicles instead. I find silicone molds easiest for removing them once frozen, and smaller molds of around ¼ cup work particularly well. At that size, two fudgesicles equal one serving of pudding, or you can have a single smaller pop for half the listed macros. It’s an easy way to turn the same recipe from a spoonable chocolate pudding into a cold summer treat without preparing a separate mixture.

Equipment Required: a high-powered blender (counter-top or immersion)

Storage: refrigerated for up to 4 days. Can also be frozen.

 

Make It Milder (and Avocado-Free): omit the avocado. Reduce the baking chocolate to 2.5 ounces (71g), the allulose to ½ cup (50g), the cocoa powder to ¼ cup (22g), and the protein powder to 2 tablespoons (14g). Divide into six servings of roughly ½ cup (125g) each, totaling 3 cups (750g).

Instructions

  1. Put the tofu, avocado, coconut milk, soy/pea milk, and chocolate in the carafe of a high-powered blender and blend to smooth.
  2. Add the remaining ingredients and blend to smooth. The mixture will be thick, so occasional tamping or mixing may be needed to keep the mixture moving.
  3. Seal the pudding in an airtight container or containers and refrigerate for roughly 2 hours to fully cool.
    To make fudgesicles, freeze the pudding in popsicle molds until solid throughout, roughly 4 hours. See note.
  4. Enjoy chilled or at room temperature.
    Topping Options: berries, nuts, seeds, cocao nibs, cocoa/cacao powder, chocolate chips, nut/seed butter, whipped coconut cream or low-carb plant-based cream.

Notes

  • Use room-temperature ingredients to prevent the chocolate from solidifying on contact with cold ingredients.
  • The coconut milk can be replaced with a very low-carb plant-based cooking cream if allergic to coconut.
  • I'm not sure how this pudding would taste using pure monk fruit or stevia as the sweetener. These sweeteners aren't as good at mellowing the bitterness of unsweetened chocolate/cocoa. If you want to use one of these sweeteners instead of a granulated one, I'd suggest trying it with the milder version of the pudding.
  • A flavored protein powder can be used in place of the plain protein powder. Omitting the protein powder will reduce the protein content of the pudding slightly, but structurally it will be similar.
  • I'd suggest using silicone molds for the fudgesicles for easy removal. The size of molds may vary and only ones on the larger end would hold a full half cup of pudding. I'd suggest using ones that hold about 1/4 cup (2 ounces - 62g). In this case, 2 fudgesicles would equal a serving of pudding, or 1 of 16 fudgesicles would halve the macros given here.

What are the macros for the milder version of the pudding?

I tried this recipe when you first published it and it looks different. Did you change the recipe?

Since first making this recipe, Mori-Nu has reduced the size of their packages of tofu slightly. They have also revised their nutritional label. I have adapted the recipe and revised the calories and macros to reflect those changes.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. There are a few items that I choose to use label or custom data for instead, despite the availability of NCCDB data. This is usually because I've found that the label data differs substantially and consistently for these foods. In this recipe, I have used label/custom data for extra-firm silken tofu (Mori-Nu), coconut milk (Aroy-D), and protein powder (pea, Now Foods). Be aware that both NCCDB and label data change over time and so what I've given here may have changed since the recipe was first published.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively affect mental health by being time-consuming and by creating an obsession with inconsequential levels of detail. In an effort to mitigate this, numbers are rounded. In most cases, numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g). Any numbers below 0.5g are given as is (e.g. 0.1g, 0.2g, etc.). Calories are rounded to the nearest multiple of 5.
