Hemp & Nooch Stuffed Avocado
Creamy avocado stuffed with a salty, tangy mixture of hemp hearts, nutritional yeast, lime, and spices.

This hemp and nutritional yeast stuffed avocado is creamy, salty, tangy, and packed with hemp hearts for extra protein and texture. It’s also naturally rich in potassium and magnesium, while the added salt provides sodium, making this a particularly nutrient-dense little meal or snack. I happen to like my avocado quite salty, so I use up to ½ teaspoon here, but that’s definitely not going to suit everyone. Start with less and adjust it to your own taste. The lime juice provides plenty of acidity to balance the rich avocado and hemp hearts, while nutritional yeast, cumin, onion powder, and optional red pepper flakes give the filling a savory, slightly spicy flavor.

I originally put this combination together with electrolytes in mind, particularly for hot days or around a workout when I’m losing more fluid through sweat. It’s also a quick option when I want something substantial without actually cooking. Just combine the hemp hearts and nutritional yeast with the lime juice and seasonings, then pile the mixture into the avocado halves. Eat both halves, and you’ve got the better part of a full meal. Add a big glass of soymilk or a few high-protein low-carb crackers, and you’re set.

If you think you’ll make it regularly, you can make it even quicker by preparing little jars of the dry filling ingredients ahead of time. Add the lime juice when you’re ready to eat, cut open an avocado, and that’s pretty much it. The amount of salt and red pepper flakes is particularly easy to customize, whether you prefer something mildly seasoned or salty and spicy, as I do.

Time-Saving Tip: If you think you'll make this often, make little jars of the dry filling ingredients and then just add the lime and avocado when ready to eat.

Instructions

  1. Halve the avocado and remove the pit.
  2. Scoop out 1-2 tablespoons (15-30g) of each avocado half to make the holes a bit bigger to hold the filling. Put this in a small bowl and mash it.
  3. Add the remaining ingredients to the small bowl and combine.
  4. Transfer the filling to the avocado.
  5. Enjoy soon after constructing.

Notes

  • This is quite salty, especially if you use ½ teaspoon of salt. I like my avocados very salty, you may not. If you are just starting out with keto and suffering from keto flu, the high amount of salt might help you feel better sooner.
  • Macros for this recipes are calculated with American national nutritional data (i.e. NCCDB & USDA entries in Cronometer) for all ingredients apart from the nutritional yeast flakes (blend of Bob's Redmill and Foods Alive unfortified) and hemp hearts (Manitoba Harvest).
  • Macro numbers are rounded. Numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g). Any numbers below 0.5g are given as is (e.g. 0.1g, 0.2g, etc.). Calories are rounded to the nearest multiple of 5.

I decided the best course of action was to transfer the domain name (www.keto4vegans.com) to my new unfinished site rather than have you encounter an error page and not have access to any of my content. 

Most of the content from my original site is already available here, and I’m working hard to redirect links, revise formatting, and add all the data needed for the new site’s fancy features to function at their full capacity.
