Peanut Butter Chia Pudding
Rich and creamy chia pudding packed with peanut butter flavor

This peanut butter chia pudding is rich, creamy, and full of peanut butter flavor, with chia seeds adding thickness and texture. Peanut butter is one of my favorite flavors, so this is the kind of pudding I’m quite happy to eat as part of breakfast or as a mid-morning snack, though it works equally well as a dessert. I particularly like it topped with chopped peanuts and dark chocolate chips for some crunch and little bursts of chocolate. The base is a simple blend of peanut butter, plant-based milk, vanilla, and sweetener, with chia seeds stirred in to thicken the mixture as it chills. You can also change the flavor and nutrition by using almond butter or sunflower seed butter in place of the peanut butter. Sunflower seed butter is a useful peanut-free and nut-free option, while almond butter gives the pudding a slightly different nutty flavor. There are plenty of ways to dress it up too, including low-carb berries, cacao nibs, coconut, nuts or seeds, or an extra spoonful of nut or seed butter. If you’d prefer something lighter, I’ve also included a lower-calorie variation made with additional plant-based milk and powdered peanut butter or peanut flour. It cuts the calories roughly in half while keeping the peanut flavor. I’ve also included the details for the pudding with the pictured toppings, in case you want to dress yours up the same way. However you make it, this is an easy pudding to prepare ahead and have waiting in the fridge when you want something sweet and peanut buttery.

Yield: 4 servings of a little over ½ cup (130g) each, totaling a little over 2 cups (520g)

Prep Time: 15 minutes | Set Time: overnight (or 8-10 hours)

Equipment required: a blender (optional). I prefer a bullet blender for this recipe. ✎

Storage: refrigerated for up to 3 days.

 

Add the Pictured Toppings: top a serving of pudding with 1 tablespoon (12g) sugar-free dark chocolate chips (e.g., ChocZero Dark) and 1 tablespoon (10g) oil-roasted salted peanuts, chopped. Macros (per serving): 385 calories | 16g protein | 30g fat | 6.5g net carbs ✎

 

Make It Lower Fat/Calorie: increase the soy/pea milk to 1½ cups (360ml) and replace the peanut butter with ⅓ cup (40g) sugar-free peanut butter powder/flour. If your peanut butter powder contains a sweetener, halve the sweetener in the recipe and then add additional sweetener to taste. This swap will roughly halve the calories to about 135 per serving. Overall macros will depend on the product used.

Instructions

  1. Put all ingredients apart from the chia seeds in the cup/carafe of your blender and blend to smooth. I prefer to use a bullet blender for this. If you don't have a blender, whisk ingredients until smooth in a medium-sized mixing bowl.
  2. If using a bullet blender, slowly add the chia seeds to the blender cup while whisking to prevent clumping. If using a traditional blender, transfer the mixture to a medium-sized mixing bowl and whisk in the chia seeds.
  3. Whisk periodically for about 5 minutes to prevent chia seeds from clumping in the bottom of the cup/bowl. Alternatively, you can put the lid on your blender cup and shake periodically.
  4. Cover the blender cup or bowl and refrigerate overnight, or for roughly 8-10 hours.
  5. Divide into 4 servings and enjoy cold or at room temperature. Top as desired.
    Topping Ideas: low-carb fruit (e.g. raspberries, strawberries, blackberries, or starfruit), chopped nuts or seeds (not cashews), unsweetened shredded coconut, nut or seed butter, and vegan keto chocoloate chips (e.g. ChocZero Dark) or cacao nibs.

Notes

  • If you only have a blender with a large carafe, it may be difficult to properly blend the ingredients because there isn't enough contents in the blender. An immersion blender would be a better option if you have one available.

  • Excessive chia consumption can cause digestive distress. If unsure of your tolerance, I'd suggest a 2-serving limit of this pudding. In addition, this pudding is quite high in calories for a small portion of food. If enjoying it as part of a full meal, I'd suggest pairing it with some bulkier food items so you're not left feeling hungry.

What do you mean by sweetener of choice? What sweeteners are keto-friendly?

I'm referring to your preferred net carb-free sweetener. My first choice of sweetener is granulated allulose because it is the most similar in taste and behavior to sugar. But allulose isn't available everywhere. Other granulated options are erythritol, an erythritol blend, or xylitol. Pure low-bulk/highly-concentrated options are pure monk fruit or pure stevia. For these, you will have to look at your packaging and adjust the quantity needed for the recipe. For simplicity, you can assume that the amount of allulose I've listed is equivalent to sugar. Sucralose or another artificial sweetener is also an option.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. There are a few items that I choose to use label or custom data for instead, despite the availability of NCCDB data. This is usually because I've found that the label data differs substantially and consistently for these foods. In this recipe, I have used label/custom data for the chia seeds (Bob's Red Mill). The version with sunflower seed butter is calculated with SunButter. The macros with the pictured toppings is calculated with ChocZero dark chocolate chips. Be aware that both NCCDB and label data change over time and so what I've given here may have changed since the recipe was first published.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively affect mental health by being time-consuming and by creating an obsession with inconsequential levels of detail. In an effort to mitigate this, numbers are rounded. In most cases, numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g). Any numbers below 0.5g are given as is (e.g. 0.1g, 0.2g, etc.). Calories are rounded to the nearest multiple of 5.
