Description
Sweet-tart rhubarb and chia topped with a lightly spiced mixture of hemp hearts, pecans, and almond flour. Enjoy this protein-rich crisp for dessert, as a snack, or as part of breakfast.

Preheat the oven to 350°F (175°C).

Put the rhubarb in a medium-sized mixing bowl.

Drizzle the rhubarb with the lemon juice and mix.

Top the rhubarb with the allulose and salt and mix. Set aside.

Combine the dry topping ingredients in a small mixing bowl.

Drizzle the oil over the dry mixture. Mix to distribute the oil throughout.

Drizzle the topping mixture with the water and mix to form a moist crumble. The amount of water needed may vary slighlty with the sweetener used. Start with 1 Tbsp and add more a teaspoon at a time as needed.

Sprinkle the rhubarb with about half of the chia seeds and mix. Sprinkle with the remaining seeds and mix again.

Divide the rhubarb mixture equally between five 6-ounce (180ml) ramekins. Or, put all of the mixture in a 6-inch (15cm) square pan or 7-inch (18cm) round pan. Don't use a loose-bottomed or springform pan for this recipe.

Top the rhubarb with the topping mixture.

Bake for 25-30 minutes, or until the rhubarb is soft and the topping is dark golden brown.
This topping is prone to burning, depending on the sweetener used and moisture levels. If you're concerned about burning the tops, you could bake it covered with foil for the first 10-15 minutes. -
Transfer to a wire cooling rack and cool for 10-15.

Notes
- I have made the pictured crisp with allulose. However, years ago, I made a similar crisp with pure monk fruit powder and it also worked out fine. This crisp is not overly sweet and the tanginess of the rhubarb comes through. If you don't like sour flavors, you may wish to add more sweetener to the rhubarb mixture.
