A sweet-tart rhubarb crisp with a protein-rich hemp, pecan, and almond topping

This protein-rich rhubarb crisp pairs a tangy rhubarb and chia filling with a lightly spiced topping made from hemp hearts, pecans, and almond flour. Rhubarb is an often-overlooked option for keto fruit desserts, with only about 2.7g net carbs per 100g. Its naturally tart flavor works especially well here, balanced with sweetener and a topping flavored with cinnamon and nutmeg.

Rhubarb is also one of those foods that immediately reminds me of summer and childhood. We always had rhubarb growing in our garden, and my mom used it to make desserts like rhubarb crisps and pies. They were some of my childhood favorites, so every summer I seem to get a hankering for rhubarb again. This version is my way of fitting that familiar sweet-tart flavor into how I eat now, while adding plenty of protein and nutritional variety through the hemp hearts, nuts, seeds, and chia.

The topping isn’t quite the same as a traditional oat, butter, and sugar crisp. You don’t get that particular crunchy yet melt-in-your-mouth texture, but it still provides a satisfying contrast to the soft rhubarb filling. I like the crisp tangy rather than overly sweet so the rhubarb flavor comes through, but you can increase the sweetener if you prefer. It works as a dessert, coffee-break snack, or part of breakfast, and the pecans and almond flour can be replaced with pumpkin seeds and sunflower seed flour for a nut-free version. Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Put the rhubarb in a medium-sized mixing bowl.
  3. Drizzle the rhubarb with the lemon juice and mix.
  4. Top the rhubarb with the allulose and salt and mix. Set aside.
  5. Combine the dry topping ingredients in a small mixing bowl.
  6. Drizzle the oil over the dry mixture. Mix to distribute the oil throughout.
  7. Drizzle the topping mixture with the water and mix to form a moist crumble. The amount of water needed may vary slighlty with the sweetener used. Start with 1 Tbsp and add more a teaspoon at a time as needed.
  8. Sprinkle the rhubarb with about half of the chia seeds and mix. Sprinkle with the remaining seeds and mix again.
  9. Divide the rhubarb mixture equally between five 6-ounce (180ml) ramekins. Or, put all of the mixture in a 6-inch (15cm) square pan or 7-inch (18cm) round pan. Don't use a loose-bottomed or springform pan for this recipe.
  10. Top the rhubarb with the topping mixture.
  11. Bake for 25-30 minutes, or until the rhubarb is soft and the topping is dark golden brown.

    This topping is prone to burning, depending on the sweetener used and moisture levels. If you're concerned about burning the tops, you could bake it covered with foil for the first 10-15 minutes.
  12. Transfer to a wire cooling rack and cool for 10-15.
  13. Enjoy warm.

Notes

  • I have made the pictured crisp with allulose. However, years ago, I made a similar crisp with pure monk fruit powder and it also worked out fine. This crisp is not overly sweet and the tanginess of the rhubarb comes through. If you don't like sour flavors, you may wish to add more sweetener to the rhubarb mixture.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. There are a few items that I choose to use label or custom data for instead, despite the availability of NCCDB data. This is usually because I've found that the label data differs substantially and consistently for these foods. In this recipe, I have used label/custom data for the chia seeds (Bob's Red Mill) and hemp hearts (Manitoba Harvest). Be aware that both NCCDB and label data change over time and so what I've given here may have changed since the recipe was first published.

For the nut-free calculation, I've used custom/label data for the pumpkin seeds (Bob's Red Mill).

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively affect mental health by being time-consuming and by creating an obsession with inconsequential levels of detail. In an effort to mitigate this, numbers are rounded. In most cases, numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g).
