This protein-rich trail mix combines peanuts and pumpkin seeds with crisp toasted coconut and dark chocolate for an easy sweet-and-salty snack. Peanuts and pumpkin seeds provide much of the protein, while toasting the seeds and coconut adds extra crunch and flavor. You can also use cacao nibs instead of chocolate chips if you prefer something less sweet.

I did a lot of camping and hiking in the Canadian wilderness growing up, so homemade trail mix was a regular part of my childhood. If it wasn’t packed for camping, it came along on road trips or turned up in school snacks. Sometimes we had simple GORP, good ol’ raisins and peanuts, while other times we managed to convince our parents to buy gummy bears and Smarties and things got considerably more elaborate. This version is definitely on the simple end of the trail-mix spectrum, but the combination of salty peanuts, toasted pumpkin seeds, coconut, and little hits of chocolate gives it plenty of flavor and texture.

There are also a few easy ways to adjust the mix. If peanuts aren’t an option, you can replace them with another suitable nut, with nutritional details for several alternatives provided in the recipe notes. For a higher-carb version, add small pieces of prune, which bring back a bit of the chewy dried-fruit element I associate with traditional trail mix. You can toast the pumpkin seeds and coconut yourself for extra crunch, buy them already toasted, or simply use them as-is when you want to keep preparation to a minimum.

Yield: 6 servings of ⅓ cup (41g) each, totaling 2 cups (246g)

Prep Time: 10 minutes if pumpkin seeds and coconut are already toasted and cooled (45 minutes if not)

Storage: at room temperature for as long as the expiration date of any included items.

 

Peanut-Free: see the notes section for options to replace the peanuts and the resultant nutritional details.

Higher-Carb: add five (48g) prunes, cut into small pieces. I use scissors for this. Divide into 7 servings of ⅓ cup (42g) each, totaling 2⅓ cups (293g).

Instructions

  1. If the pumpkin seeds and coconut are not yet toasted, the seeds can be toasted in a rimmed baking sheet at 350°F (175°C) for 5-7 minutes. The coconut can be toasted at the same temperature for about 2 minutes. You can add it to the same rimmed baking sheet at about the 5-minute mark. Monitor carefully to prevent burning. Allow to cool completely once toasted.

  2. Combine all ingredients in a jar or bag and shake to combine. Enjoy!

Notes

  • According to the USDA, oil-roasted peanuts are lower in net carbs than dry-roasted peanuts. However, product labels may not agree with the USDA's data. Product labels often show oil-roasted peanuts as having similar net carbs to dry-roasted ones. With dry-roasted peanuts, a serving of this trail mix has 3.5 net carbs.
  • When looking for vegan chocolate chips, look at the dark varieties. They are more often vegan. I am using ChocZero dark chips. Lily's dark chips are also vegan.


Other Nut Options: below are the macros (per serving) for replacing the peanuts with 100g of another nut. You may wish to toast raw nuts for more depth of flavor and crunch. You may wish to cut or break large nuts into smaller pieces. Note that the last 2 options here are higher-carb options.

What data is used to calculate the calories and macros?

When available, I typically use NCCDB data in Cronometer to calculate calories and macros. There are a few items that I choose to use label/custom data for instead, despite the availability of NCCDB data. This is because usually I've found that the label data differs substantially and consistently for these foods. In this recipe, I have used label/custom data for pumpkin seeds (Bob's Red Mill) and chocolate chips (ChocZero, dark). Be aware that both NCCDB and label data change over time and so what I've given here may have changed since the recipe was first published.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively affect mental health by being time-consuming and by creating an obsession with inconsequential levels of detail. In an effort to mitigate this, numbers are rounded. In most cases, numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g). Any numbers below 0.5g are given as is (e.g. 0.1g, 0.2g, etc.). Calories are rounded to the nearest multiple of 5.

Most of the content from my original site is already available here, and I’m working hard to redirect links, revise formatting, and add all the data needed for the new site’s fancy features to function at their full capacity.
