Pumpkin Spice Protein Bars
Soft pumpkin spice protein bars with sunflower seed butter, coconut milk, and crunchy walnuts

These vegan keto pumpkin spice protein bars combine pumpkin purée, warm fall spices, sunflower seed butter, and vanilla protein powder in a soft, substantial bar. Agar agar helps set the pumpkin and coconut milk mixture, while chopped walnuts add some texture and contrast. These bars work equally well as part of breakfast, a coffee-break snack, or something sweet after a meal.

Pumpkin spice season continues, and apparently I’m determined to work pumpkin into as many recipes as possible while it lasts! I particularly like these bars because they bring together the flavors I associate with fall while also providing a substantial amount of protein. Sunflower seed butter is my first choice here because it’s particularly low in net carbs and relatively high in protein, but other nut or seed butters should work if that’s what you have available.

There’s plenty of room to adapt the recipe as well. You can swap the walnuts for almonds, hazelnuts, or sunflower seeds to make it nut-free, and a protein powder with a complementary flavor, such as cinnamon roll, could be interesting in place of vanilla. Just keep in mind that a strongly flavored protein powder can compete with the pumpkin spice. Soft pumpkin spice protein bars made with pumpkin purée, sunflower seed butter, coconut milk, and vanilla protein powder. Chopped walnuts add a little crunch to the warmly spiced bars.

 

Yield: 9 servings of 1 bar each, totaling 9 bars

Prep Time: 25 minutes | Cool Time: 3 to 4 hours

Equipment Required: a 7-inch (18cm) square cake pan or 9x5-inch (23x13cm) loaf pan. I love this one.

Storage: refrigerated for up to 5 days. Can also be frozen.

Instructions

  1. ​In a small saucepan, whisk together the coconut milk, pumpkin purée, water, agar agar powder, pumpkin spice, and salt. Bring to a bubbling state on medium heat. The mixture is quite thick so will not really "boil." Cover with a well-fitted lid, reduce heat to low, and cook for 5 minutes. . Whisk occasionally.
  2. Meanwhile, put the sunflower seed butter in a medium-sized mixing bowl, and the allulose or preferred sweetener and vanilla extract in a small heat-safe bowl of choice.
  3. Chop the walnuts. Set a small portion aside for topping if desired.
  4. Line a 7-inch (18cm) square cake pan or 9x5-inch (23x13cm) loaf pan with parchment. Allow the parchment to hang over at least 2 sides of the pan for easy removal of the bars. I also prefer to use a loose-bottomed pan.
  5. Once ready, add roughly ½ cup (120g) of the pumpkin mixture to the allulose bowl and combine with a small whisk or fork (see note). Add the remaining pumpkin mixture to the sunflower seed butter bowl and whisk until fullly combined.

  6. Add the protein powder and walnuts to the pumpkin-sunflower seed butter mixture and combine thoroughly to form a smooth dough without any dry patches. I use a medium-sized silicone spatula for this.
  7. Transfer the dough to your lined pan and spread/press it into an even layer. I use the spatula and/or my hands for this.
  8. Cover the top of your bars with the allulose-pumpkin mixture. Sprinkle with the walnuts if you set some aside.
  9. Transfer the bars to the fridge to cool and set for 3 to 4 hours.
  10. Cut into 9 bars and enjoy chilled or at room temperature.

Notes

  • Pumpkin spice is a common spice blend in North America. If you happen to have my first book you can find a recipe on page 78. If not, there are plenty of recipes available online.
  • Sunflower seed butter, or SunButter specifically, is particularly low in carbs and high in protein. Structurally, another nut/seed butter should work, but the macros will likely be different.
  • The bars are sweetened by the protein powder. If you don't find your protein powder to be very sweet, you may wish to add some additional sweetener. Feel free to use another flavor of protein powder that matches with pumpkin spice, like cinnamon roll. Note that protein powders with a bold flavor may mask the pumpkin spice flavor.
  • Feel free to replace the walnuts with an equal weight of almonds, hazelnuts, or sunflower seeds. This will not change the macros significantly.

What do you mean by "granulated sweetener of choice"?

The other most common keto-friendly granulated sweetener is erythritol. You can also use erythritol or allulose blends containing monk fruit or stevia to increase the sweetness to sugar-like levels. These will make for sweeter results. Using xylitol is also an option, but be aware that xylitol does contain some digestible carbohydrate, though product labels claim otherwise, and that xylitol is toxic to dogs, even in relatively small amounts.

What data is used to calculate nutritional data for this recipe?

When available, I usually use NCCDB data in Cronometer to calculate calories and macros. Occasionally, I use USDA data. For a few ingredients, however, I use label or custom data instead, even when NCCDB or USDA data is available. Typically, this is because I’ve found the product label data to differ substantially and consistently for those foods. Please note that NCCDB, USDA, and label data can change over time, so the nutritional calculations for the recipe, make at the time of writing, may differ from calculations made with current data.

The calorie and macro numbers on your recipes seem oddly uniform. Why is that?

Counting calories and macros can negatively impact mental health, so most numbers are rounded. Calories are rounded to the nearest multiple of 5, and macros are rounded to the nearest 0.5 g or whole number, depending on their value and use. For simplicity, naturally occurring sugar alcohols are counted as fiber unless the recipe includes added sugar alcohols.
